This would save the hassle of opening a new tab and navigating to the correct page and then hunting for the correct tab in a long list.

I just right-click it and move it to the trash. Or, I can hover over it, click the 3 dots and move it to the trash. Or, I can goto the URL opera://bookmarks and remove it.

I don't have a booking.com one in the speed dial suggestions area.

If you see a booking.com thing above the main speed dial area, maybe it's something to do with the "Continue on booking.com" feature that you can disable at the URL opera://settings/startPage. But, as for the X you're looking for on the start page to get rid of it, the X might be a ways to the right of booking.com and it might be hard to see depending on your wallpaper.

On a side note, also notice the "Continue shopping" option in those start page settings.

So you want that tab scrolling is enabled but doesn't work? - @leocg

No.
I want "Enable tab scrolling when many tabs are open" to be turned on.
When turned on there are at least 4 ways to scroll:

click on the scroll bar above the tabs to jump (i.e. if you are at the left most tab and click above the top of the right most tab, you jump to the last tabs)
drag the handle of the scroll bar above the tabs
hover the mouse over the tabs and use the scroll wheel
click on the left or right arrow on the sides of the tab bar

I can't stand method 1. and I think the most straightforward way would be to disable/hide/remove the scroll bar above the tabs (and thus method 2. as well) but I want to keep method 3. and 4. intact
